Cebiche is a South American seafood dish that originated in Peru.
It always has fresh raw fish cured in fresh citrus juices, most commonly lemon and spiced with chili peppers or other seasonings, including chopped onions, salt, and coriander.

Cebiche is often eaten as an appetizer; if it's eaten as a main dish, its usually accompanied by side dishes that complement its flavors, such as sweet potato, lettuce, maize, or crispy fried chicken bites.

Types of cebiche:

Fish cebiche:

It's the most common type of ceviche, from cuts of square-shaped pieces of fish that are later mixed with lemon abd salt.

Mixed cebiche:

It is one that contains the same ingredients as the common ceviche, to which various seafood or fish have been added.


Black shells cebiche:

It's a typical dish from the coast of Tumbes and it's made with black shells and browned in the classic way with chulucanas lemon, seasoned with red onion, garlic and chili pepper.


Shrimp cebiche: 

It is a typical dish of the Arequipa region made with river shrimp.


Octopus cebiche:

It is similar to the common fish ceviche but octopus cebiche is prepare with tender octopus or boiled water to soften its meat.


Cebiche of tollo:

It's prepared with shark, typical of the Peruvian north coast.


Chinguirito:

It consists of shredded dried guitar meat, a species of ray native to Sechura Bay, it's marinated with lemon juice, limo and red onion. It's usually accompanied with yucca, corn and sweet potato.


Amazonian cebiche:

It's typical of the Peruvian Amazon, it consists of being prepared with regional fish meat, like paiche, dorado, doncella and corvina. It usually has charapita pepper.


Duck cebiche:

Typical of the Norte chico, it's made with native duck previously macerated in a mixture of mirasol chili, garlic and lemon juice. The duck is then cut into chuncks and cooked in a dressing with sliced onion. It's served hot with boiled yuca as a garnish.


Others types of cebiche are the canan, the criadillas and the hard-boiled egg cebiche.
There is also a variety of hot ceviche, like chicken cebiche and cebiche at the stone..

For breakfast, I usually have some cereal with yogurt. I sometimes have a sandwich and a glass of orange juice.

For lunch, I usually have chicken rice with salad and passion fruit juice. It's delicious!

For dinner, I often have a sandwich and milk. I also like having dinner at Rancho.

Rancho is a nice restauran and you can try a delicious roast chicken.
